Simple strawberry syrup
Ingredients:
1 cup fresh strawberries (hulled and sliced)
1.5 cup granulated sugar
1 cup water
Instructions:
1. Prepare the Strawberries:
Wash and hull the strawberries (removing the green tops).
Slice them into halves or quarters for quicker cooking.
2. Combine Ingredients:
In a medium saucepan, combine the sliced strawberries, sugar, and water.
3. Cook the Syrup:
Place the saucepan over medium heat. Stir occasionally until the sugar dissolves completely.
let it cook for about 10-15 minutes, stirring constantly. The strawberries will soften, and the syrup will turn a vibrant red. Be careful as the liquid is VERY HOT.
4. Strain the Syrup:
After cooking, remove the saucepan from the heat. Strain the mixture through a fine-mesh strainer or cheesecloth into a clean container to remove the strawberry solids.
Use a spoon to press the strawberries gently to extract as much liquid as possible, but avoid mashing the strawberries too much, as this could make the syrup cloudy. You can use the strawberry solids for jam, toping for ice cream, or add it to porridge, nothing goes to waste here.
5. Cool and Store:
Allow the syrup to cool to room temperature.
Transfer the syrup into a jar or bottle with a lid and store it in the refrigerator. It will keep for about 1-2 weeks.
Optional Variations:
Vanilla: Add 1 teaspoon of vanilla extract after straining for a hint of vanilla flavour.
Lemon: Add a few lemon slices or 1 tablespoon of lemon juice while cooking to give a zesty twist.
This strawberry syrup is perfect for cocktails, lemonades, or drizzling over pancakes or ice cream!
