Fig Nut Bread

My grandmother was originally from Italy, and in her country figs were a common staple in a lot of meals and desserts. Needless to say, when I was growing up, there was almost always some at her house. So when we bought our farm and saw that there was a huge fig tree on the property, we knew it was meant to be … and that we would need to fig-ure out what to do with all that fruit and make Nana proud! We’ve made jam, cobblers, and cookies, but I have to say, this fig nut bread is probably my favorite thing to make (and eat!).



Ingredients:

3 large eggs

2 cups sugar

3/4 cup oil

2 cups ripe figs (mashed)

3 cups all purpose flour

2 tsp baking soda

1 tsp salt

3/4 tsp cinnamon

1/2 cup buttermilk

1 tsp vanilla extract

1 cup chopped walnuts


Directions:

Beat eggs and sugar until smooth. Add figs, oil, and vanilla, beat on low for 1 minute. Sift flour, baking soda, salt, and cinnamon together into a separate bowl. Alternate adding flour mixture and buttermilk. Beat on low until fully incorporated. Fold in walnuts.


Grease and flour 2 large or 3 medium loaf pans. Fill about 2/3 or 3/4 full with batter.


Bake at 350 for 55-60 minutes.
