Coleslaw

You might think of coleslaw as just a side dish or hot dog topping, but it’s also a great summer snack all by itself. Cabbage is 92% water so it will definitely help you stay hydrated. Plus it’s a good source of vitamin K, potassium, and folate, and also contains vitamin A, vitamin C, calcium, and iron. So, the next time you come in from a day of working or playing outside in the heat, try a bowl for a little hydration boost!


Ingredients:

1 medium head of cabbage, chopped or shredded (about 10 cups)

1 cup mayonnaise

2 tablespoons honey

2 tablespoons lemon juice

½ teaspoon salt

½ teaspoon black pepper


Directions:

Whisk together mayonnaise, honey, lemon juice, salt, and black pepper.

Add cabbage and mix thoroughly.

Refrigerate before serving.
